Flavor: Types of Flavors.


Flavor is defined as it is a combination of both taste and smell.


Flavor is a sensory impression of a food or substances, & determined by the chemical senses of taste and smell.


Flvorant is defined as a substance that gives another substance flavor, altering the characteristics of the solute, causing it to become sweet, sour, tangy etc.


Flavoranta are focus on altering the flavors or enhancing the flavors of natural foods products such as meats and vegetables, or creating flavor for food products that do not have the desired flavors, most of the flavorants are focused on scent and taste.


Flavorants also defined as a anything that contributes flavor to foods.

  • Flavors helps to improve the flavor of food.
  • Play an important role in customer satisfaction.
  • Flavor influence the further consumption of food.
  • Primary function of flavor is to add taste to foods.
  • Flavor content no nutritional value.
  • Most of the flavors are volatile in nature and chemically unstable in presence of air, light, moisture and high temperature.
  • Flavors are used to conceal offensive odor and nauseous taste.
  • Flavors are used in food products, cosmetics, personal care products etc.
  • Stability of flavors is important factor because of its relationship with quality and acceptability of foods.

Types of Flavors:

1-Natural Flavors
2-Artificial Flavors
3-Natural identical Flavors

1-Natural Flavors

Natural Flavors are created from substances extracted from natural sources like plant & animals & not chemically modified.
ex: essential oil, extracts, oleoresin, essence, protein etc.
Natural Flavors can be obtained from a spices, leaf, roots, eggs, bark, edible portions of plant, herbs, meat, dairy, poultry the process roasting, heating or enzymolysis.

2-Artificial Flavors

Artificial Flavors is defined as a it is a mixture of chemical substance that taste and smell like a natural. Artificial flavor are chemically synthesized compounds, the natural & artificial flavor's significant role is to add flavor into the food. These substances are chemically different & not present in natural products.

3-Natural Identical Flavors :

Natural-identical flavoring  substances defined as substances which is chemically isolated from aromatic raw materials or can be obtained synthetically, these substances are chemically identical to natural substances but may be obtained by chemical modification of other natural substances.
Ex: vanillin is identical to the vanillin found in vanilla but not obtained from vanilla pods.
